 Peas with Spring Onions

A great recipe for Spring here in the Bay Area.
Peas are ripe and in season!

Ingredients:

English Peas, fresh, 4 cups

Green Onions, chopped, 1-1/2 cup

bullet

Garlic, minced, 1 large clove

bullet

Italian Parsley, chopped, 1 tbsp

bullet

Olive Oil, extra virgin, 3 tbsp

Pepper, ground

Heat 2 tbsp of the olive oil in a large skillet over moderate heat.  Add the garlic and sauté 1 minute to release its fragrance.  Add the peas and stir to coat with the oil and garlic.

Add 1/3 cup of water, bring to a simmer, then cover and adjust heat down to maintain a gentle simmer.  Cook until peas are just tender, about 5 minutes.

Stir in the parsley and green onions, cook about 1 minute to wilt the onions slightly.  Season to taste with ground pepper.

Just before serving, stir in the remaining olive oil.
